I constantly browse sites, looking for ideas, checking on the competition and
such.

Is there a way to look at the source code and tell which cart system someone is
using?

I'm using Yahoo right now and they are easy to see in the source, but some of
the sites I'd like to emulate are using carts that are not as obvious.

I've played with OS Commerce and Zen, but they're way to complex for me at this
time.

If you don't know how to do this without help, then having the source
code certainly isn't going to help you.

If you are interested in changing to something else, you should
consider getting someone else to do it that understands it. Most carts
will have a backend that is easy to use and then you can manage
everything there. But spend your time on marketing your products

It seems to me that if he keeps reading source code then his knowledge will
increase. Note he only wanted to ID the cart system. Methinks he wants to see
what system is running on sites he finds appealing.
