It's actually getting worse...I used to get asked to do flash lots and
always advise clients against it saying 'well, you know old chap, these
things can be just as easily done in good ol' html at a fraction of the
cost' etc etc

I lost lots of work.

and as bruce forsyth said 'she's my wife' I'm sorry, anyway, I'm going to
have to learn it and just bite my tongue from now on...sell out...

any you guys finding the same? maybe you're better at deterring clients...

In some cases you'll never be able to deter them... but maybe you don't
really need to.

But instead of going to the trouble of learning flash, or risk losing a job
by telling the client that you don't do flash or can't do it or refuse to do
it, instead find somebody in your area (or even on the internet) who can do
it and then for that part of the site you outsource it to them

If you have a good graphic design school in your area you can put a posting
up on the bulliten board or job board there and get some students to work
for cheap... you would be sure to find somebody who is willing to work
pretty cheap for a few bucks and a chance to build up his/her portfolio

And it can be one of those cases where they might be a whiz at graphics or
flash, but can't do HTML or scripting or server-side programing... and if
they get a job they'd be more likely to pass that part of the work on to you
if you've done the same for them now and then
