SquirrelMail is, in my opinion, the best.
Although, I have to ask why they are only letting you choose one?

I've used them all. My order of preference:
1. SquirrelMail
2. Horde
3. NeoMail
SquirrelMail isn't anything special to look at, but it has good features:
- Each folder can display unread/total messages
- The browser title can show how many messages you have at the bottom of the
screen so that you can see the message total without going to that window
- Email can go directly to specified folders
- The folders remain in view while you're reading messages or configuring
your account or whatever
- You can send from a variety of addresses and choose from a drop-down menu
- You can select from different colour themes
- And lots more
Horde is more popular with some people. It has a more modern interface but
IMO it does less.
I didn't like Neomail. It was just a way to access online email that wasn't
any fun to use.
You can probably find demos of them somewhere.

FWIW, several of my clients use Horde now over the other two. It's a little
slower but they like the layout and options.
Your hosting service should give you the option of all three, to be able to
use all three any time you want. I think that's pretty standard.
If your control panel is cpanel it should be standard.

I like the interface for Horde's IMP better than the others. Back when I
had a virtual host account, I installed squirrelmail so I wouldn't have
to use the pre-installed Neomail.
Sqirrelmail is a little easier to install, though.

Yes, it's not that they would let me choose only one, it's that there were
no links to demos. I'm setting up sites for the completely clueless, those
who would prefer me to tell them which one to use. SquirrelMail was easy to
learn, so if the others don't have much more to offer, I'll stick with that.

I like Squirrelmail for its simplicity, which is particularly helpful if
connecting through a very slow connection.
NeoMail is a total pain because it uses icons, but doesn't explain what
they are for!
