I am running IIS 5.0 on W2k professional, and cannot figure how to
implement virtual servers here,

Can it be that virtual servers are only available in the server version?

Yes.

IIS on Windows 2000 Pro, Windows NT Workstation and Windows XP Pro (ie, the
desktop OSes) are limited to a single active site).

You will need to use the server equivalents to host multiple sites.
