Shopping System Improvements

Have made quite a few improvements to our shop system over the last few
weeks and have got another improvement in mind.
Stock Control
At the moments, a shop owner has to manually subtract 1 from the product qty
when an order comes through. This I think can be improved upon.
The problem is that someone could go to the shop, and add loads of a product
to their order, not complete the order and leave the product missing for
other shoppers.
Any ideas on the best way to approach this?
Bear in mind that the system can be integrated with almost any payment
gateway so ther is no guaratee that the gateway will throw them back at a
successful transaction page.

Shop --> Payment --> Shop(and deduct stock)

Thats how oscommerce does it anyway.
