We are a way off from moving to Server 2003 but would like to use IIS 6.0 as patching IIS 5.1 is proving a nightmare..

No, you cannot install IIS 6.0 on anything else but Windows Server 2003.

....plus, IIS5.1 is only for WinXP Pro.

IIS 6.0 is only available as a part of server 2003
