I'm several months away from even starting my web site and will likely pay to
have it built professionally.
I have chosen a domain name and want to register it while it is available.
Does it matter who I register with since it most likely will be hosted somewhere
else later?

I would go with www.namecheap.com
Their support is great and I have never had a problem with them in the years
I have had domains there. Infact they only charged me $8.88 for a domain I
let slip into redemption when they could have asked me to pay $100+ to get

Nope. But make sure you go to an actual registrar, rather than buying the
name through a hosting company.
Keeping your registration and hosting separate is important. Your name is
yours and you take it wherever you go, so there's no need to buy it at the
same place with your hosting. Additionally, I have seen (and been part of)
major nightmares with shoddy hosts who basically try to hijack your name by
refusing to let you change your registration information.
I prefer DomainDiscover.com (formerly BuyDomains) for my domains.

advice and register your domain with any company EXCEPT Registerfly.

I've not used RegisterFly, but Kerry's point is a good one - there are some
registars out there which are awful. I'm not sure where would be the best
place to get feedback on which are good and which are bad -
webshostingtalk.com is good for hosting, but I don't know if they cover
domain registrars. I'd add to Kerry's list and recommend staying away from
123reg.co.uk, because their support is so poor.
Personally I now use domainmonster.com, but I'm sure that both Karl's and
Viper's recommendations are sound.

I often use 123reg.co.uk and have never had cause to complain.
That said, as it's only for DNS registration/hosting, I've never
needed to. At least as far as my usage is concerned, DNS should
be pretty much "fire and forget".

Assuming you mean that such a domain would get a better ranking in a
search for "widgets", then yes, it does. it doesn't affect Page rank
itself, but it's one of the variables (along with Page Rank, keyword
density, title, etc) that determines rank order in the search results.
This is illustrated by an actual search for "widgets" on Google. The
top result has "widgets" in the domain, but only has a PR of 8. The
second result has a PR of 9, but doesn't have "widgets" in the URL or
title. If the results were down to Page Rank alone, then the second
site would be first.

That depends on the word. Google does substring searches on some
words, but not others. In the case of widget, it does appear to do so.
However, a search for "widget" will return a differently ordered set
of results to a search for "widgets".
